Another family favorite meal is this Chicken and Rice One-Bake Wonder! It’s the ultimate easy meal—just toss everything into one baking dish, pop it in the oven, and let the magic happen. Ingredients: Feeds 3 or 4 depending on how hungry you are

  • 1/2 tbsp olive oil
  • 3 cups uncooked brown rice
  • 3 yellow onions, finely chopped
  • 6 cups sliced white mushrooms
  • 1 1/2 cups shredded carrots
  • 4 1/2 cups chicken broth
  • 1 1/2 cups cream
  • Salt and pepper
  • 1 tbsp butter
  • 12 chicken thighs
  • 2 tbsp finely chopped fresh thyme
  • 2 tbsp minced garlic
  • 3 tbsp chopped fresh parsley

Instructions:

Step 1:
Preheat oven to 350°F (180°C). Grease a 9- by 13-inch baking dish with the oil. Add rice, onions, mushrooms, carrots, chicken broth, and cream and stir until combined. Season with salt and pepper.

Step 2:
Melt butter in a small bowl. Place chicken thighs skin side up (if skin on) in rice mixture and brush with melted butter. Sprinkle with thyme and garlic and season with salt and pepper.

Step 3:
Cover baking dish with a lid or foil and bake 1 hour. Uncover and bake 30 minutes more, until rice is tender and top is lightly browned.

Step 4:
Top with parsley and serve.
